A Fruity Sausage Caserole

Prices updated - Sunday 17th November 2019

TAS – Tefal Actify Spoon

  • 8 -12 chipolata sausages
  • 1 TAS flour
  • diced shallots
  • apricots drained and juice reserved
  • ½ cup of vegetable stock
  • ½ cup of frozen sweetcorn
  • Some slightly steamed broccoli heads for colour and texture. As much or as little as you like.

(Feeds 3 hungry children or two adults)

  1. Place diced shallots and  ½ TAS of olive oil into the Actifry and cook for 2 minutes, meanwhile  using a wet knife slice the sausages into 2 cm pieces.
  2. Add the sausages to the Actifry and brown for 5 minutes.
  3. Stop the machine and add the flour by sprinkling evenly over the sausages. The best way I find to do this is using a small tea sieve which prevents the flour clumping.
  4. Put the machine back on to mix in the flour for  aprrox 1 minute.
  5. Now add the drained apricots and add some of the juice to create a paste. Add the sweetcorn and a little of the stock about ¼- ½ cup, so you have a creamy texture but don’t allow it to swim in juice at this stage or you may find the juices will leak out of the pan.
  6. Put the Actifry back on for a further 5 minutes. Top up the mixture with juice for a sweeter mixture or stock for more of a savoury taste.
  7. Meanwhile steam the broccoli heads to add at the end of cooking.
  8. Make sure you have enough liquid to make a rich creamy sauce, add more of either stock or apricot juice if you need to.
  9. Finally mix in steamed broccoli and cook for a further 1 minute to combine.

Cooking time 12 minutes for chipolatas, extend cooking time if using thicker sausages.
