Last night I had feed the children early and as my husband was out I decided I fancied a Thai curry. Inspecting the fridge provided me with some squash, mushrooms and fresh baby tomatoes.

The outcome was a delicious vegetable red thai curry, which was delicious, fast and perfect for my meal for one!

Red Thai Squash Curry for One

  • 1 red onion finely chopped1 clove garlic grated
  • Tesco’s red thai sauce (I used two tablespoons of this, however mixing your own red thai sauce would be as good)
  • 3 inch slice through of a squash cut into to 2cm chucks
  • 15 baby mushrooms cleaned and destalked
  • 6 baby tomatoes chopped in half
  1. Cook the squash for 10 minutes or until cooked and tender.
  2. Add the mushrooms and cook for a further 5 minutes.
  3. Remove the cooked mushrooms and squash and set aside.
  4. Add  1/2 spoon of oil to the Actifry and  fry garlic and onion for 2 minutes until soft,
  5. Add the Red Thai sauce and baby tomatoes to the onion mix, cook for about 2 minutes until tomatoes start to soften.
  6. Return the Squash and mushrooms to the Actifry with the sauce mixture and mix with a spatula. You may need to add a little water if the sauce mixture is a bit dry.
  7. Finally heat everything through for further 2 minutes or until the squash is piping hot.

Enjoy with a lovely glass of Sauvignon  – well that part is totally optional!
